This recipe gets you started with the tofu base, and then you add your favorite egg salad ingredients (mayonnaise, celery, etc). Chill before serving.

More than just a substitute for egg salad! The only egg is in the mayonnaise; use soy mayonnaise for a vegan variation. Serve on wheat toast with crisp lettuce and fresh tomato slices. 

Tofu Veggie Salad

What 's nice about this salad, is that you get to choose your favorite vegetables. It works with just about everything. Besides the tofu, the non-veggies are teriyaki sauce, olives and Dijon mustard.

Pressed tofu is tossed together with tomato, onion, and cilantro in an Asian-inspired vinaigrette providing a simple way of incorporating tofu into your diet. You can certainly play around with this recipe, adding whatever you like, I garnish mine with lime wedges.

The chicken salad is quick and easy. If you want a little 'zip', add a few drops of hot sauce to the mixture! Serve on lettuce as a salad or on bread as a sandwich.

I came up with this as I was trying to use things I had on hand. I have fresh dill growing on my deck, which was the chief inspiration for this upscale version of chicken salad. (I had some for dinner--delicious!)

Tired of tuna salad? Then try salmon instead. The dressing is delicious and a bit different from your typical tuna fare. Yogurt, chopped celery, capers are combined and folded into the salmon. Serve on a bed of shredded lettuce. Serves four.
