INGREDIENTS
3/4 cup butter or margarine, softened
1 1/2 cups sugar
3 eggs
1 teaspoon vanilla extract
1 1/3 cups all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon salt
3 tablespoons baking cocoa
1/2 cup chopped nuts
4 cups miniature marshmallows
TOPPING:
1 1/3 cups semisweet chocolate chips
3 tablespoons butter or margarine
1 cup peanut butter
2 cups crisp rice cereal

DIRECTIONS
In a mixing bowl, cream butter and sugar. Add eggs and vanilla; beat until fluffy. Combine flour, baking powder, salt and cocoa; add to creamed mixture. Stir in nuts if desired. Spread in a greased 15-in. x 10-in. x 1-in. pan. Bake at 350 degrees F for 15 to 18 minutes. Sprinkle marshmallows evenly over cake; return to oven for 2 to 3 minutes. Using a knife dipped in water, spread the melted marshmallows evenly over cake. Cool. For topping, combine chocolate chips, peanut butter and butter in a small saucepan. Cook over low heat, stirring constantly, until melted and well blended. Remove from heat; stir in cereal. Spread over bars immediately. Chill.

I made these last weekend for our church. I have already had request for the recipe. Next time I will not try to spread the marshmallows, mine seemed to stick togather. They were just fine before I tryed to spread them. If you make sure that they are in a single layer and even all over I think it would work better.

I just made these as a trial run for a Christmas cookie exchange and I loved them! I am definitely making these again! Spreading the marshmallows was a little bit challenging but the chocolate top layer covers them so the marshmallow layer doesn't have to look pretty.

These are GREAT!!! I took them to some friends and every one went nuts over them!! Try putting a little bit of butter on your knife and pat the marshmallows instead of trying to spread them. A sure hit!!!

You Can't Please Everybody, That's what i'm learning. I made this recipe for my husband to take to work and share with his co-workers. I got mixed reviews. Everyone loved them, but some said they thought the marshmellow was a bit much, and my husband thought there was way too much peanut butter flavor. I will definately make again, but next time i will cut back on the amount of peanut butter. Thanks for the Recipe, It really looked good, if i didn't make it i would have thought it was store bought.

When my friend made these as part of my Christmas present, I thought they were some of the best bars I'd ever eaten! When I made them, however, they were pretty sub-par. I was so disappointed. It was tricky to get the bottom cake-layer just right, not underbaking, but not overbaking either, knowing that it was going to be put back in for an additional 2-3 minutes. I overbaked mine accidentally. I also had a hard time making the chocolate layer spread. No other reviewers mentioned it, so maybe it was just me. I think next time (and there definitely will be a next time!), I will add just a little milk to make it more spreadable. I LOVED the flavor and texture of these bars, so I will have to practice making them again. Thanks for the recipe!

Mmmm...these were so yummy. I'm not a big peanut butter fan, so I substituted Hershey's Cinnamon Chips and the smell was HEAVENLY. I love how the crispy top layer tasted with the mashmallow. I read reviews in advance and ended up patting down the melted marshmallows with a large spoon dipped in butter. I had no problems with that step. Like other reviewers, I too had a problem with the bottom layer. I used a smaller pan and baked it longer, but it tasted like undercooked dough. Also I found that the whole bar lost its shape easily if the room temperature was too warm, so I kept it refrigerated. I would make this again with a much wider pan. Overall it was delicious.

I made these from the guys at work and they LOVED them!! Big success! I used walnuts and i didnt even bother trying to spread the melted marshmallows over the cake. Once you pour the chocolate topping over the melted marshmallows it really doesnt need anything else.
