Great recipe. I was able to fit the batter into two loaf pans. I substituted 1/2 the oil with applesauce as others suggested, and I chopped some fresh cranberries and put that in.

This recipe was awesome! I had had some trouble in the past with some pumpkin and banana bread recipes I tried, they always turned out too dry or too dense. But not this one! It was perfact! Moist and fluffy. And I love that I already had everything I needed to make this at my apartment. The only thing I changed was adding two over ripe mashed bananas, some extra pumpkin spice and I used two cups of white sugar and one cup of brown. I defiantly recommend. I know I'll be making it again!

This is a great recipe. I think it's the oil that makes it so moist. Will try subbing applesauce for part of the oil next time, as other reviewers suggested -- just to make it more healthy. I used only 2 C sugar, and about 1/4 c brown sugar, plenty sweet. Also used 2 1/2 T pumpkin spice instead of the other spices called for. I made one loaf, and about 20 muffins, cooking them for about 25 mins. I added 1 c chocolate chips because we like them. Thanks for another good one!

A very flexible recipe. I used 1/2 the oil and added applesauce for the other half. I also not only added the nuts, but also added about 1 cup of cranberries. It turned out great!

This is always a hit and is wholesome too. I bring this to satisfy the masses at social gatherings. I never come home with any left. Easy, no frills recipe that can be dressed up with cream cheese whipped with confectioner's sugar for an icing spread.

Wow! I made this recipe when I was expecting company. I made the 3 loaves each a little different; one with golden rasins, one with cranberries and one with chopped pecans. (I made the batter and once they were in the pans, I sprinkled these ingredients evenly and mixed them in lightly so they would be inside and not on top). I had pureed butternut squash in my freezer already measured to 2 cups, so I gave it a try in place of the pumpkin---nobody knew! I did add 1 tsp pumpkin pie spice, 1/2 cup oil with 1/2 cup applesauce, and 1 1/2 cups white sugar. Even with my alterations, my week long company couldn't get enough! They would pull it from the fridge every chance they had! If you have some homemade apple butter to put on this for breakfast...it is supurb! Even plain, warm or cold, a definite keeper! :-)

I cut this recipe in half and put it in my bread machine so that I could leave and come home to yummy pumpkin bread. Wow, it was delicious! I did make two alterations though, I put in a teaspoon of vanilla (for 1/2 the recipe) and I used 1/2 of the white sugar the recipe called for and substituted the other 1/2 with brown sugar. Everyone here just gobbled it up. I definitely plan on making this bread again and again, and maybe adding some raisins, nuts, chopped dates and cranberries. But even without all of the extra goodies, this bread is great.

Excellent! I used 1/2 cup melted butter plus 1/2 cup veg. oil and evaporated milk instead of water to make it richer. Added 1/2 tsp Allspice, a pinch more nutmeg. Everything else exactly by the recipe. Definitely a keeper!

What great pumpkin bread. The pumpkin that I used yielded more than 2 cups (maybe 2 1/2), so I just threw it all in. It took a little longer to cook, but was SO moist (not gooey). I added more nutmeg and cinnamon than called for and used some ginger, too. Everyone that had it raved about it. I have added it to my recipe box!

Great recipe! I added chopped pecans instead of walnuts and I added 1/2 tsp. vanilla and 1/4 tsp. almond flavoring to the batter. I also served the sliced bread with cream cheese frosting. Delicious!

WOW, AMAZING! I absolutely LOVED this bread. A friend and I baked this (it was her first time ever baking), and it was so easy and so much fun. It was so good that the three loaves disappeared in a flash!!

Everyone LOVED these! I used part wheat flour, half apple sauce for the oil and half brown sugar instead of all white. Delicious. Next time I might not add quite as much sugar because they were very sweet. That isn't bad, but I just want to see if I can get by with using less.
