My husband loved this bread. I used applesauce in place of the oil. I didn't add nuts, but I made one loaf with chocolate chips (kids favorite), another with craisins (my favorite) and another just plain (husbands favorite). Very versitle and delicious.

This was really good, I was pleased with the results. I did make quite a few changes though. Like other reviewers I used half applesauce and half oil, I only used two cups of sugar and used half whole wheat, half all-purpose flour. In addition to that I also added some more spices, 1/2 tsp cloves and 1 tsp allspice. I didn't have any 7x3 pans so I just poured the whole thing into a 9x3 pan and baked it at 335 degrees for about 1hr and 20 minutes. It was huge but very yummy!

I made some changes to increase flavor, as suggested by other reviewers: used 3 Tbsp pumpkin pie spice and 2 tsp vanilla extract, decreased sugar to 1 cup white sugar, 1 cup brown sugar. Made one batch with 1 cup raisins, another batch with 1/2 cup mini choc. chips. Both were delicious! To make it more healthy: used whole wheat flour instead of all-purpose, used half unsweetened applesauce/half oil, used baking and brown sugar Splenda instead of regular white and brown sugar. You can't even taste the difference!

Whoa! This was UNbelievable. I made all the suggested changes: 2c sugar instead of 3, double spices, and 1/2c oil plus 1/2c applesauce. This was so dense and SO moist! No one would ever know it lacked a cup of sugar and half the oil! Like a dessert more than a bread.

I made this recipe for the girls at work and I didn't even print or save it. Everyone wanted a copy of the recipe and they told me it was better than any pumpkin bread recipes they had made before! I had to find it again and it took me a few days but it was delicious and I have now saved it to my favorites!

Darn delicious. I ALWAYS think breads taste better the next day. This one smelled wonderful while it was cooking; I couldn't wait for a sample. If it tastes better tomorrow I don't think I'll be able to stand it! It is moist and so flavorful. I did not add the walnuts. It is a little sweeter than most pumpkin bread recipes I've tried. I like it but others may want to make some adjustments with the sugar. I have to have another piece. DELICIOUS!

The Best Pumpkin bread ive ever made/eaten. I used splenda instead of regular sugar, and reduced the amount by half a cup or so, added a little extra pumpkin to it, and a splash of vanilla! Excellent!! Definetly will make again!!

Very tasty! I followed except for 2 tsp pumpkin pie spice and only 2 cups sugar. I left out nuts. I made one loaf and then added choc chips for muffins. Muffins cooked up in 20 minutes for me. Yum!

We love this recipe. Perfect for fall. I make it without nuts and prefer it without the raisins. Thanks for the recipe!

Great pumpkin bread! I followed the advice of others and substituted half the oil for applesauce (heaping 1/2 cup for moistness) and doubled the cinnamon. I also added 1/2 tsp. nutmeg and 1/4 tsp. ground cloves. I halved the sugar and it was still sweet - I think the recommended amount of sugar would make it dessert-sweet.

YUMMMMMM!!! I've made this recipe over and over again. All the bread I make is gone by the end of the day. I add a bit of cloves and extra cinnamin to satisfy our taste. Love this recipe

All I can say is WOW! I was in a random pumpkin bread mood this afternoon and this recipe totally hit the spot. It was absolutely perfect, even though I goofed a little bit and added too much flour. I think I'll try it with more spice next time. Thank you!
