INGREDIENTS
5 eggs
1 1/4 cups vegetable oil
1 (15 ounce) can solid pack pumpkin
2 cups all-purpose flour
2 cups sugar
2 (3 ounce) packages cook and serve vanilla pudding
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon salt

DIRECTIONS
In a mixing bowl, beat the eggs. Add oil and pumpkin; beat until smooth. Combine remaining ingredients; gradually beat into pumpkin mixture. Pour batter into five greased 5-3/4-in. x 3-in. x 2-in. loaf pans. Bake at 325 degrees F for 50-55 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pans to wire racks to cool completely.

Editor's Note: Bread may also be baked in two greased 8-in. x 4-in. x 2-in. loaf pans for 75-80 minutes.

Had great taste! It didn't look like bread at all! It looked more like a regular flat pie. Glad I tried before Thanksgiving

This bread is great. I gave it away to my favorite clients last year for Thanksgiving and got such great feed back that I am baking more this weekend to do the same.

I was looking for a recipe similar to one I found in the newspaper and this is exactly what I wanted. I took it to work for a holiday party and everyone raved about it! I would definitely recommend this to anyone. I actually have the recipe to several coworkers. It can also be prepared in a bundt pan.
