I made this tonight with my leftover Easter ham, and it was delicious! My kids (twins are 3, plus a 6 yo) are PICKY, and they gobbled this down. Hubby went for seconds. I followed the recipe as written with the exception of using chicken broth instead of water and cut the bouillon down to about a teaspoon. The recipe says to let your potatoes boil 10-15 min, but maybe their potatoes were bigger than mine. My potatoes were well done after 6 minutes boiling, so keep an eye on them!

I usually stick with my Grandmother's ham, green beans and potato recipe. Which is yum, by the way. But this year I was looking for something different to do with my leftover Easter ham. This recipe caught my eye because I have never had potato & ham soup before. My only changes were due to not having listed items handy. I used celery seed instead of celery. I also used leeks instead of onion just because I like the flavor better. I placed everything except the roux and milk into a slow-cooker and went shopping. When I returned several hours later, I added the roux and milk. Everyone LOVED it!!

My family loved this. I thought it was a little salty so will omit additional salt next time. The ham adds enough salty flavor. I also added carrots for more vegetables. The recipe says serves 8, I would say closer to 5 or 6.

Just tried this recipe and my family loves it! I had some leftover smoked ham from Easter but no celery in the house, so I substituted with celery salt....mmmmm I think I'm going to have another bowl!
