This egg salad is divine! I cut back on the mayo a tad, and it was perfect. Served it on rye bread with tomatoes and lettuce - yum!!

I made this egg salad two nights ago for dinner. I don't eat egg salad often but my brothers really liked it. I added about 2 tablespoons of extra mayonnaise because my brother loves the stuff. Great recipe!

Good basic recipe (which is what I was looking for). I left out the onion on personal preference. I added a tiny bit of pickle juice to give it some oomph, next time I think I'll add more. To heck with dicing the eggs by hand (it takes FOREVER), I used my Pampered Chef chopper. Took just minutes to chop up all the eggs! For perfect hard-cooked eggs, the Broiler & Egg Association of Minnesota says to place eggs in single layer in covered saucepan in cold water, bring to boil, remove from heat and let stand for 15 minutes. Once the time has elapsed, place eggs in ice water until cool. This works beautifully - the eggs are done to perfection, there's no green edges, and they peeled quite easily, no tearing!

I have always made my egg salad "eggsactly" this way except I used diced pickles instead of onions. I like the green onions, nice change of pace. The only thing this recipe needs for me to give it a 5 star is a bit of garlic. So, after a few bites, I added a touch of garlic and it was very good. Thank you!

I love the method for boiling the eggs. That's what I do and they come out perfect every time. I liked this egg salad, however, it needs a little kick. Next time I'm going to add some cayenne for more flavor.

This was good but I still prefer mine better. I used mirical whip not mayo. I liked the green onions but I don't think I prefer the mustard.

Made this recipe for lunch today. I did cut the recipe to one serving and it came out pretty good. I did not have green onions so I just used chopped vadalia onion. Thanks for sharing.

I love this with lettuce on sandwiches. (I don't care for paprika so I left it out) You could also add some curry powder to make it very different.

This is good and very easy! I used onion flakes and then added about a tsp or so (a few shakes) of Woostershire Sauce. Yummy! Thanks for a great addition to my recipe file!

I scaled the recipe for 1 serving and used only 1 egg, 1 tbsp light hellmans, and substitued dried minced onion for the green onions, the rest of the recipe was followed as is. Perfecto.

A very good and easy egg salad. I had previously hard cooked eggs my own way. Didn't have green onions so I diced up some sweet onion. This is perfect as is without the sandwich or crackers.

These are great except...I cooked the eggs as stated and they weren't done. I put eggs in a pan and covered with cold water, brought them to boil, put lid on it and turned it down to low for 25 minutes. They were perfect. I also didn't have any green onions so I just sprinkled some minced onions in and it was fine. I used miracle whip instead of mayo and it was the perfect combo of mayo/mustard and great flavor. I will be making these for lunch several times a week.

Update: left in the frig for a bit, but I wouldn't suggest this because it got very runny. It was best when I first mixed it up. Still, a great egg salad/spread! I am going to use the filling for deviled eggs for Father's Day. Original review: I wanted a cold salad/spread for sandwiches for lunch today. I chose this one, and my husband said it tasted like his grandmother's egg salad, which is high praise indeed! Thanks for the post!
