My husband and I really enjoyed this recipe. We eat meat almost every night for dinner so I'm always looking for some good recipes that don't include meat to change things up a bit. The only changes I made were that I added a little lime juice with the cilantro and added some salsa in the tortilla. I used fat free cream cheese so this was a very light and easy recipe. The hardest part was just chopping everything up!

I made this recipe when our son and his vegetarian girlfriend came for a visit. It was delicious and was enjoyed by everyone, including the meat lovers. I did not have fresh cilantro or hot peppers. I used 1/2 of the called-for dried cilantro and some crushed red pepper flakes. I also added Mexican-style rice as others suggested. A vegetable salad and the burritos with a light dessert made us an excellent meal. I also served this with the fresh tomato salsa recipe from all recipes for the burritos and chips. Delicious!

We thought these were delicious! I did add a little cumin and red pepper (as well as cooked chicken for a DH who thinks that if there is no meat it is a side dish). I had a leftover one cold for lunch and it was still great!

I wish I could rate this recipe higher! These were absolutely delicious, I had made these twice so far. I doubled the ingredients, I needed to make a lot. I used reduced fat cream cheese instead of regular, which didn't affect the dish at all. After I put the mix into the tortillas, I added some shredded reduced fat cheddar then rolled up. I served these with salsa and sour cream. I couldn't eat just one. I love these so much. Thank you for this delicious vegetarian recipe (:

So easy to prepare and even easier to eat :) Do add a healthy sprinkling of chili powder to the mix. I served mine up with salsa and sour cream. YUM!

I took a chance and made these while staying with my family in a beach cottage last March. They wanted me to cook some Mexican food for dinner one night, but most of my older family isn't used to Mexican or spicy food, so I was trying to find things that I thought they would like. I saw cream cheese with this one, and figured I'd try it. They all absolutely loved these burritos, even my 82-year-old grandmother and her sisters. I made them exactly as the recipe said, and I don't think I would change a thing the next time. They were delicious and simple to prepare. I think I will make them for my husband and myself this weekend! Highly recommended.

These are a healthy, tasty feast. I don't understand why the nutrition info says 30 grams of fat. Shouldn't be that high.

Honestly, I only used this recipe for inspiration. I feed my family of 6 with this easy variation: heat up 3 cans of black beans, 8oz of fat free cream cheese and chopped onions in saucepan until all cheese has melted. After warming up the flour tortillas in the microwave (about 20 sec), I just pile on the bean mixture, then shredded cheese and salsa. The whole family enjoys it and it only takes about 10 mins from start to finish. *and pretty healthy

Love, love, love this!! I did add chicken, oh and some diced up fresh spinach in the mixture. I also put Spanish rice in the tortilla as a filler. I doubled it and made extras to put in the freezer - they were awesome out of the freezer as a quick lunch! Great, great recipe!!

This was quite good - and very healthy too. I, like many, made a few changes: I added about 2 tsp. cumin, 3 cloves of garlic (minced), 1 chipotle in adobo and (chopped fine), low-fat cream cheese, 1 cup frozen corn, and 1 can of diced tomatoes (drained). I also used tortillas from Costco that you cook at home. My son has decided that it "is DEFINITELY a keeper!".

Really good! Made as written except omitted jalapenos (didn't have any) added a pinch of cayenne pepper instead. Also used dried cilantro. Next time, will add a little corn.

I wish these were spicier! Next time I'll add the whole jalapeno and maybe a little chile powder as well. I ended up opening my burrito and adding some fresh spicy pico de gallo. Perfect! I will make these again for sure, so fast and easy!
