I followed Tina's recommendation of doubling the recipe and adding green chilies (I did it in leiu of jalapenos--my kids might not want it too spicy), upping the garlic to 3 tsp. adding 1 tsp. cumin and some diced tomatoes (I don't like whole diced tomatoes so I just added the juice)and then adding 8 oz. of cream cheese and a can of corn. Turned out delicious! Thanks.

this was great! I made it for my mom and I, we're vegetarians. you can definitely tweak it for your tastes. I left out jalapenos (we're wimps) and added some cheese. We topped with salsa, sour cream and avocado, yummy! I made a double batch and it was enough for 5 burritos, I'll be making it to take for lunches!

I'm a fan! Love burritos but never got around to making them at home. I'll use this recipe as a base from now on. I added half a can of no-salt-added canned diced tomatoes, about a cup of corn, about a cup of brown rice, some scallions, and a mixture of cayenne, cumin and chili powder (I went a little heavy on the cayenne - definitely gave it a punch). Used slightly less than the 3 oz. of cream cheese but had no problem with the flavor - worked perfectly - will add the full 3 oz. in the future. Also cooked four thick slices of bacon and tore them up and added them to the mix. Did not add any other cheese or salsa. Used whole wheat burrito-sized tortillas and made four heaping burritos. Freezed one and will see how it works defrosted and microwaved. In the future will try this with green bell pepper (there was a lot of red going on) and maybe even play with some spinach, avocado, grilled chicken, etc. A BIG fan of this recipe - thanks for posting!

My Fiance and I really loved this dish. We did make some changes to it to use up what was on hand. Instead of the Jalapano we used a big Hungarian hot pepper and doubled the recipe. Flavours rocked. Next time we plane to put some nice crispy romain in right before wrapping to give it some cool crunch. Thanx for The dish! Peace love and applesauce!

The bean burrito was amazing! I took the suggestions of some of the other reviewers and added 1/2 tsp of cumin, 1/2 tsp of chili powder, sliced olives, doubled the cream cheese and added a can of diced tomatoes, then spooned the filling over avocado slices.

This was SO good. I just loved it. I followed the recipe exactly! It was full of flavor. During the cooking process I was scared it was getting to watery, but by the end it had gone down. I served this with grilled corn and some chips and guac!

This recipe is great! I followed some others suggestions and added 1/2 tsp cumin and 1/2 tsp chili powder. Very spicy! I also added some frozen spinach and a dash of nutmeg. This made 4 servings for my family. I will definitely make these again.

Yummy! I followed the recipe exactly as written, using low fat cream cheese and jalapenos from a jar. Also used green tortillas for extra color. I doubled the recipe for four of us and it was just the right amount. Served with Sweet Corn Cake on the side.

I made this recipe twice. The first time, I made it exactly the way it was directed and it was good! I had no complaints. The next time I made it, I added tomatos, cumin, red chili powder, and put slides of avocado in my burrito. Both ways of making the burrito are delicious!

YUM! I doubled the amount of black beans, kept the cream cheese amount the same, subbed canned green chiles for the jalapenos, added a sprinkle of taco seasoning, and added cheese before wrapping them up. Same basic recipe, but adjusted for what I had on hand. Made 5 or 6 burritos when combined with some rice.

This recipe is so delicious and easy to make! I added 1 1/2 cups of cubed chicken to the vegetables and browned them. Also I sprinkled the mixture with grated Mexican cheese and served the tortillas with sour creme. Thanks for sharing this recipe, I will definitely make it again!

Easy fixing and really tasty! Tasted original recipe and it was really delicious. As suggested previously, added to the original recipe: 1/2 tsp chili powder, 1/2 tsp cumin, frozen corn, approximately 1/3 cup medium salsa, bumped up to a large fresh minced jalapeno, and Mexican blend cheese. My husband loved it. Yummy, keeper! Thank you for this delicious recipe!

OMG, these are so good. I tasted the bean mixture before I added the cilantro and was not impressed. Well, after adding the cilantro and 1tbs of salsa these were great! A healthy, cheap, quick meal! Thanks.

LOVED this recipe. I added 1/4t. cumin and 1/2t. chili powder, as well as a half can of Rotel and topped the filling with shredded cheddar and fresh salsa...it was perfect. Next time I may add some corn and rice, but it certainly isn't needed. They were excellent!!!
