When my boyfriend thinks something vegetarian is wonderful, its a minor miracle- and he loved these. Other reviewers are correct- this makes about 4 burritos. Don't cut back on the salt- the cream cheese counts on it to add zip!

I omitted the red pepper (personal preference) and added leftover shredded chicken, otherwise followed the recipe. These were very good. Daughter and husband loved them, except husband wasn't fond of the cilantro. Will definitely make again.

This was a very flavorful burrito. My husband and I aren't vegetarians, but we try to eliminate meat a few times a week--this meal felt very satisfying despite being vegetarian. It reheated well the next day, too.

This recipe was great. I omitted the jalapenos since I was cooking it for my daughter. I added pineapple salsa on mine. Yummy!

Very good and seems to be pretty versatile. I also added 3 cloves of garlic, 1/4 cup of sour cream, more Cilantro and used Tomato FlatOut bread. My husband also put hot taco sauce over the top, which added another layer of flavor. Great dish.

I loved this recipe! I am a huge fan of black bean quesadillas and this was a new twist. I used 1/3 less fat cream cheese and they turned out great.

Oh I loved these so much!! It was so incredibly easy, I'm sure I'm going to keep some black beans on hand more often, when I don't feel like spending a lot of time on dinner. My DH, liked the taste, he just said he missed the meat.

Liked this because it was so easy and tasted good. Sauteed the onions a little longer than called for and then added in the other veggies. Also, did not heat the tortillas first. Instead, filled the burrito with completed filling, wrapped it all up, topped with some cheese and then popped it in the oven until the burrito had a little crisp and the cheese was melted. Topped with salsa and served. They were a hit!

I liked this a lot - I'd liked to try it tho with some rice (half the quantity of beans and a little rice) - and maybe add shrimp/chicken. Its very easy though :)

These are very yummy indeed. I omitted the bell pepper simply because we didn't have any on hand, but it turned out great. I also made them into tacos instead of a burrito. My vegetarian hubby and I loved them.

Very, very good. I used chili oil. I also cut up some chicken, mixed in some Ancho & Cayenne Chili Powder and fried up the chicken in the wok first. Then I removed from Wok and followed instructions, adding chicken back at the end. Excellent - this will be a favorite in our family for years to come. Thanks for sharing!

These are good, but the recipe just begs to be altered. I tried to stick pretty close to the recipe even though I could think of a million ways to change it. I added a little cumin and chili powder, omitted the cilantro, and used neufchatel cheese instead of full-fat cream cheese. I also heated the tortillas in the microwave, although I'm sure that didn't change the taste. The first burrito that I ate was fine but a little bland. For the second burrito, I added salsa and cheese and that gave it more pep. Some other things I might try with this are corn, canned tomatoes, rice, chicken, spinach, sour cream, guacamole, and definitely more spices. As other reviewers have mentioned, this makes very large burritos if you're only making two.

Okay, first let me say I had a houseful of skeptics when I said I was making black bean burritos, but these magnificent gems quietly hushed my meat-eating men. I took "Tina's" advice and doubled the recipe and added a can of Rotel w/jalapenos and seasoned it up with cumin, chili powder, and mexican seasoning. I also made homemade Mexican Rice from this site, and added rice and mexican cheese to the burritos when I stuffed them. I took all the leftover rice and added to the bean mixture and used the next day as a dip. Fabulous!!!

Very easy and good "as is", plus you can adjust to suit your mood - sometimes I add some cheese and/or rice into the burrito, sometimes I have it with just the bean filling.

This was very easy and good. It's really just a matter of spicing and flavoring the beans, so you can substitute spices to suit your taste - I added cumin and skipped the cilantro. Since some reviewers thought it was a bit dry, I added some salsa to the mix, but you probably could do lime juice or something like that instead. I poured the canned beans through a splatter guard and just let them sit all spread out to drip for a while, which seemed to work well. This recipe is a good alternative to our usual mexican fare of soft tacos or fajitas and I'll be making it again!
