INGREDIENTS
2 1/2 pounds plums, pitted and sliced
1 1/2 cups sugar
1/4 cup quick-cooking tapioca
1/4 teaspoon almond extract
1/8 teaspoon salt
2 tablespoons cold butter
1 (9 inch) pie crust
1 egg white

DIRECTIONS
Place plums in a large bowl. In another bowl, combine the sugar, tapioca, almond extract and salt. Cut in butter until crumbly; gently stir into plums. Let stand for 15 minutes.
Transfer to a greased 2-1/2-qt. baking dish. Roll out pastry to 1/8-in. thickness; make a lattice crust. Place over filling. Trim edges. Beat egg white until foamy; brush over pastry. Bake at 425 degrees F for 40-45 minutes or until golden brown.

This was about 10 times sweeter than I wanted it to be. I wouldn't suggest using Sweet Italian Prune Plums if you are going to make this! I was embarrassed since I took it to a potluck! Serves me right for making something that hadn't been reviewed. I might try the same recipe with peaches that aren't quite so sweet. Our plums are just so sweet that the added sugar made it WAY too much!

A friend first made this and it was so good, I asked her to send me home with a bag of plums from her plum tree and email me the recipe. I gave this 4 stars instead of 5 b/c my cobbler turned out very soupy due to the juiciness of my plums. Perhaps taking a paper towel to soak up a little of the juice before going on with the recipe might help or even adding more tapioca...even so, whether on a plate or in a bowl, with a little Cool Whip, this is a great end of the summer dessert!
