Sweet, thick and full of cherries, this pie is irresistible. The filling is whipped up from a classic combination of canned cherry pie filling, sugar, flour and almond flavoring.

For this simple, slightly piquant pie, ground cherries bake up wonderfully with sugar and spices and doused with fresh lemon juice. Look for these gems at your favorite farmers market and bake up a pie or two.

You 'll be able to tell that this is a prize-winning recipe. The crust is flaky and buttery, the cherry filling is thick and perfectly sweetened, and there 's a lovely hint of almond extract.

Although you 'll have to pit the cherries for this one, the fabulous results will make it worth your effort. Sugar, flour, butter and cherries are stirred together and poured into a pie shell. Then on goes the lattice top and in goes the pie into the oven.

This recipe is great with vanilla ice cream or yogurt. It's my first year trying the crust and haven't looked for another pie crust recipe since. If desired, mix 1/4 cup of wheat germ into the pie crust dough.
