Directions

  1. Heat olive oil and curry paste in a large pot over medium heat; cook and stir onion, carrot, celery, red bell pepper, and red pepper flakes until onion is softened and translucent, 5 to 10 minutes. Break the bouillon cubes into onion mixture; add lentils and stir.
  2. Pour enough water into the pot, so the water line is 1 inch above the lentil and onion mixture; bring to a boil, reduce heat to low, and simmer until lentils are fully cooked, about 40 minutes. Stir spaghetti sauce into the soup and simmer 5 minutes. Stir cilantro and black pepper into soup right before serving.

A nice version of lentil soup. It has a sweet aftertaste. I doubled the red pepper to counter the sweetness. The curry paste and the spaghetti sauce are a nice touch which were both homemade and it may have been why there was so much sweetness. Maybe a splash of vinegar at the end would tone it down a bit. At first it seemed the soup would be very thin almost watery but once I added the spaghetti sauce, it thickened up and turned into a hearty lentil soup. I soaked the lentils for two hours and cooked everything in a pressure cooker for 10 minutes. The lentils were a bit more than al dente, whole and not mushy but soft enough not to crunch. Thank you lw for sharing this recipe.

As I looked around the related recipes the name caught my eye,something's I substituted ,I had no curry paste or spaghetti sauce ,I replaced with pace salsa,small jalapeno pepper,love the look of carrot in others recipe so I used 5 carrots and 1 cup celery. as I'm honestly not a bean person ,truthfully this was phenomenal!!
