INGREDIENTS
1 cup sugar
1/4 cup finely crushed saltines
1/2 teaspoon baking powder
1 1/3 cups flaked coconut
3/4 cup chopped pecans
1/2 cup chopped dates
1 teaspoon vanilla extract
3 egg whites

DIRECTIONS
In a large bowl, combine sugar, cracker crumbs and baking powder; stir in coconut, pecans, dates and vanilla. In a small bowl, beat egg whites until stiff peaks form; fold into coconut mixture. Drop by tablespoonfuls 2 in. apart onto lightly greased baking sheets. Bake at 300 degrees F for 12-14 minutes or until edges are lightly browned. Cool for 2 minutes before removing to wire racks.
