INGREDIENTS

  • 1 cup sugar
  • 1/4 cup finely crushed saltines
  • 1/2 teaspoon baking powder
  • 1 1/3 cups flaked coconut
  • 3/4 cup chopped pecans
  • 1/2 cup chopped dates
  • 1 teaspoon vanilla extract
  • 3 egg whites

DIRECTIONS

  1. In a large bowl, combine sugar, cracker crumbs and baking powder; stir in coconut, pecans, dates and vanilla. In a small bowl, beat egg whites until stiff peaks form; fold into coconut mixture. Drop by tablespoonfuls 2 in. apart onto lightly greased baking sheets. Bake at 300 degrees F for 12-14 minutes or until edges are lightly browned. Cool for 2 minutes before removing to wire racks.
