"I wanted something new for lunch, and we didn't have much fruit, so this is what I came up with. A mix of watermelon, peanut butter, and a couple other ingredients. Please trust me, it's not gross."

Directions

  1. Stir the sugar and cinnamon together in a small bowl; set aside.
  2. Spread 1 tablespoon peanut butter onto each slice of bread. Sprinkle the peanut butter with the sugar mixture. Sandwich the watermelon slice between the bread.

This was a discovery that I thought would be a real flop. I did not have white sandwich bread, so I subbed whole grain. Neither of us wanted to eat it, but once we took a bite we were pleasantly surprised. The watermelon actually worked well with this combo. I will def do this when the little ones come to our house. I just would not try to pack it in a lunch :)

I have a bag of cubed watermelon so I thought I'd give this a taste test (without the bread). The watermelon makes the peanut butter really creamy and then you get a of cinnamon. Definitely interesting and strangely satisfying. I'm on a crepe fix so I'm going to try this as a filling.. will let you all know how it goes!

Man when I came across this I was having a second thought about the recipe. But boy oh boy did we love it. I started out and surprised my kids with a sandwich. man did they light up with that first bite. thanks for the recipe will have to make again. very tasty
