INGREDIENTS
1 cup butter (no substitutes), softened
1 cup sugar
1/2 cup packed brown sugar
1 egg
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1 1/4 cups quick cooking oats
1 cup Grape-Nuts cereal
1 teaspoon baking soda
1 teaspoon baking powder

DIRECTIONS
In a mixing bowl, cream butter and sugars. Beat in egg and vanilla. Combine flour, oats, cereal, baking soda and baking powder; gradually add to creamed mixture. Roll into 3/4-in. balls. Place 2 in. apart o ungreased baking sheets; flatten with a fork. Bake at 375 degrees F for 10-12 minutes or until lightly browned. Cool for 3 minutes before removing to wire racks.

These cookies are an excellent way to use up that box of Grapenuts. Great browned butter flavor. I liked to bake them until brown and crispy.

Just decided to make these since I had a box of Grape Nuts and oatmeal to use up. So much tastier than I thought they would be...simple and delicious. Next time I'm going to try making them bigger and leaving them softer to use in ice cream sandwiches.
