Daddy's Whisker Soup

"When I was a child, my best friend and I loved when my dad made this cheese, potato soup with dill. It looked to us like dad he had shaved all of his whiskers off into the pot of soup, earning the name Daddy's Whisker Soup!"

Ingredients

  • 12 potatoes, peeled and diced
  • 1 yellow onion, diced
  • 1 tablespoon salt
  • 1 tablespoon pepper
  • 5 cups milk
  • 1 (1 pound) loaf processed cheese food (such as Velveeta®), cubed
  • 1 teaspoon dried dill weed
  • salt and pepper to taste

Directions

  1. Combine potatoes, onion, 1 tablespoon salt, and 1 tablespoon pepper in a large soup pot. Cover with water; bring to a boil over high heat. Cook until the potatoes are very tender, 10 to 15 minutes. Drain potatoes, and return to pot.
  2. Stir the milk and cubed cheese into the potatoes. Season with dill, salt, and pepper. Cook and stir over low heat until the cheese is melted, about 10 minutes.
