Curried Turkey Salad
SUBMITTED BY:
Jo Crouch
"In East Alton, Illinois, Jo Crouch blends leftover turkey with grapes, peanuts and celery, then ties it together with a creamy curry dressing. The colorful combination's great for a light lunch or dinner."

My mom has been making this recipe for years, adding cubed canned pineapple and sliced water chestnuts, and toasted slivered almonds instead of peanuts. I buy the turkey already cooked (a little more expensive but much simpler). Make it the day before you plan to serve it, and add the almonds just before serving. Totally easy, absolutely yummy, and your guests will rave about it!!

This is good- I liked the grapes, celery, and nuts. I used cashews because they just "go" better with this type of thing, I think. I scaled it down to 3 servings (still made a lot) and used extra curry and light mayo.

Yummy! My alterations: Miracle Whip instead of mayo, soaked raisins instead of grapes, and added some onion. Served it on toasted buns with a little pile of shredded carrot on top of the salad.

This was ok, but not as good as I thought it would be and I love curry. I should have put the turkey through the food processor. I shredded all white meat and it was kind of dry, even a day after I made it. It needs something, I just don't know what it is.

I made this for my boyfriend who orders curry anything anywhere we go out to eat - He LOVED it. We both find it incredibly addicting - I made slight changes - I add use red grapes instead of green, chicken instead of turkey, almonds instead of peanuts, and I add raisins and shredded carrot (the carrot is mostly for color). This recipe is incredible - I dont usually post reviews but this one rocked our world!
