Very tasty. Nice combination of sweet with curry. I am making this to give as gifts. I am using pint jars so I halved the recipe and only used 1/4 cup of almonds. I also used brown rice. With the brown rice increase the water to 3 cups and cook 50 minutes and let stand 5 minutes.

This was absolutely delicious! I halved the recipe and made on the spot to serve with crab cakes. Perfect. I used craisins, dried apricots, and some golden raisins. I did sub shallot for onion. The beef broth gives this a wonderful richness, and the curry makes it. Wow, I loved this and so did hubby. I will return to this recipe for sure. Thank you for sharing this.
