INGREDIENTS
3 medium leeks, white portion only, thinly sliced
1 garlic clove, minced
2 tablespoons butter or margarine
1 (14.5 ounce) can chicken broth
3/4 cup water
1 1/2 cups thinly sliced carrots
2 celery ribs, thinly sliced
2 teaspoons chicken bouillon granules
1/2 teaspoon curry powder
1/8 teaspoon pepper
1 (12 fluid ounce) can fat-free evaporated milk

DIRECTIONS
In a 3-qt. saucepan, saute leeks and garlic in butter over medium heat until tender. Add the broth, water, carrots, celery, bouillon, curry powder and pepper. Bring to a boil. Reduce heat; cover and simmer for 20-25 minutes or until vegetables are tender. Cool slightly. Place 1 cup soup in a blender or food processor; cover and process until smooth. Return to pan. Add milk; heat through (do not boil).

can't help it ... it was very tasty...but i used veggie cubes instead of chichen stock and the granuales (sp)... but i so liked it ... would serve it to company... it was a good find

This soup tastes like it is bad for you, but really it is quite healthy. Yummy. I added extra curry power and some chili flakes to spice it up. It was very quick and easy. I will definitely make this again.

Thank you Arnold for this wonderful recipe! My husband and I both loved it. We like our food on the hot/spicy side so I did use a nice spicy curry and added a small red chili pepper - I could imagine also adding some potatoes and chicken pieces to this recipe as well - but not because it was missing something - just for a change. I will be cooking this soup often - it's a keeper!

AWESOME soup. I added potatoes, green beans, ground ginger, and about 1/4 cup chopped basil. I also used about 2 tsp of curry. absolutely delicious.

me and my boyfriend tried this soup because he loves leeks and we both love curry and its so hard to find a recipe with leeks! it was absolutely amazing this is gonna be one that we make alot! the only things we changed are the spices we doubled them and nxt time i think we are gonna double the veggies there just werent enough for us but this was great and we loved it!

Incredible! I never knew that leeks could taste so good. I added a little bit more curry powder and some cayenne pepper to give it some heat. Great recipe!

One of the tastier low fat soups I've made. I really like the idea of using nonfat condensed milk. I used veggie bouillon base instead of chicken. I also added 4 small finely cubed yukon gold potatoes, only because I had them. Yum!
