This was good but not good enough to make regularly. It's a lot of calories for a vegetable side dish. I'll make it for special occasions - thanks for a creative recipe!

Great, simple recipe. Very creamy, with just enough curry flavor. The curry flavor is subtle enough that I think I might even be able to get it past the hubby, and even my 4 year old! Thanks to the original poster.
