Ingredients

  • 12 ounces fresh cranberries
  • 1 cup sugar
  • 1/2 cup cider vinegar
  • 1/2 cup port wine
  • 3/4 cup orange marmalade
  • 1/3 cup raisins
  • 1 1/2 teaspoons Spice Islands® Curry Powder
  • 2 teaspoons Spice Islands® Pumpkin Pie Spice
  • 1/4 teaspoon salt

Directions

  1. Preheat oven to 325 degrees F.
  2. Wash and sort cranberries.
  3. Combine sugar, orange marmalade, vinegar, port, raisins, curry powder, pumpkin pie spice and salt in a large bowl. Add cranberries and mix well.
  4. Spray a 2-quart baking dish with cooking spray. Pour in cranberries and cover with foil.
  5. Bake for 1 hour until cranberries are soft.

  • Variation
  • May substitute dates for raisins. Also, cinnamon may be substituted for pumpkin pie spice.
