Curried Chicken Turnovers

INGREDIENTS
1 cup finely chopped cooked chicken
1 medium apple, peeled and finely chopped
1/2 cup mayonnaise
1/4 cup chopped nuts
1 green onion, minced
1 teaspoon curry powder
1/4 teaspoon salt
1/4 teaspoon pepper
pastry for double-crust pie
1 egg, beaten

DIRECTIONS
In a medium bowl, combine the first eight ingredients; mix well and set aside. Roll pastry to 1/8-in. thickness. Cut into 5-in. circles. Spoon about 1/4 cup filling in the center of each circle. Moisten edges of pastry with water. Fold over and seal edges with a fork. Place on a greased baking sheet. Cut 1/2-in. vents in tops. Brush with egg. Bake at 425 degrees F for 15-20 minutes or until golden brown.

Happy accident occured for me w/ this recipe... By the time I'd prepared the pie crust I realized I didn't have any cooked chicken on hand afterall. In place of the missing meat I added diced cucumbers, dried cherries and yellow raisins. I'd recommend this vegetarian variation! It was filling and deLICious! My 1 1/2 yr old gobbled it up!

Instead of making several small turnovers, I made two big ones and we had them with mixed greens for dinner. I like the mix curry-chicken-apple, even if I thought it was missing a little zing. They would make a great party appetizer!
