INGREDIENTS
2 cups cubed, cooked chicken
1 medium unpeeled red apple, chopped
3/4 cup dried cranberries
1/2 cup thinly sliced celery
1/4 cup chopped pecans
2 tablespoons thinly sliced green onions
3/4 cup mayonnaise or salad dressing
2 teaspoons lime juice
1/2 teaspoon curry powder
12 slices bread
Lettuce Leaves

DIRECTIONS
In a bowl, combine the first six ingredients. Combine mayonnaise, lime juice and curry powder; add to chicken mixture and stir to coat. Cover and refrigerate until ready to serve. Cut each slice of bread with a 3-in. heart-shaped cookie cutter. Top with lettuce and chicken salad.

YUMMY! i substitued 1/2 cup light mayo and 1/4 cup of fat free yogurt, cherry craisins, and toasted almonds. i served this on mini phyllo shells and it was wonderful. elegant looking and easy.

We used this chicken salad on crossaint and served it at our church activity. Everyone loved it! It is so easy to make and tastes so good. When you boil the chicken, add some salt to the water to enhance the flavor of the chicken. Another suggestion, almonds or cashews will be a great alternatives to pecans. Thanks for the great recipe. We love the presentation of green and craisins.

I found this recipe on another site and my friends all raved about it so I had to look it up so that I could send them the recipe. We used it for a baby shower tea. I then used the leftovers at a football game party and they loved it too! 5 stars all around.

I made this recipe (x4) for my niece’s bridal shower this past Sunday. We served these with croissants and got many compliments. We even had people asking to take the leftovers home. I followed the recipe to a T with the exception of the curry powder, which I did not have and was not willing to purchase. I looked up a recipe for curry powder online and used what I had on hand for the ingredients, which were garlic powder, ground ginger, chili seasoning, salt, pepper, and dry mustard. Prior to the shower I made a sample batch, ½ with Miracle Whip and ½ with Hellman’s Mayonnaise. I preferred the mayo and used that for the shower. The cranberries, green onion and celery gave this salad a real festive look. My mom and dad had leftovers for lunch for two days now as well as myself. My cousin and sister also took some home for their families!! Great hit!! I will definitely make again.

I wish I could rate this with 10 STARS! This is THE BEST chicken salad ever. I served it on little Pepperidge Farm rolls and my guests loved them. I probably added more curry than the recipe because I like the flavor so test it as you are mixing it and put in your desired amount. If you are in a hurry, buy a cooked chicken from the grocery store and shred it for a fast/easy way to make this.

Great recipe! Instead of bread, I wrapped this salad in flat leaf lettuce, then skewered it with a toothpick and topped it with a seedless grape. Everyone that tried these "roll-ups" enjoyed them. I will be making this recipe again!

I made this just as the recipe said for a spa party and they were a HUGE hit! Everyone loved them and they went super fast. My only advise is to make a second batch!

Super delicious! The curry is not strong, so if you love curry, you can definitely add more. I made a nice presentation by buttering one side of the triangle of a completed sandwich and than dipping it in toasted sesame seeds. The seeds added a nice flavor and texture.
