Curried Brown Rice Salad

INGREDIENTS

  • 4 cups cooked brown rice, cooled
  • 1 cup chopped unpeeled tart apple
  • 1/2 cup raisins
  • 1/2 cup chopped onion
  • 1/2 cup slivered almonds, toasted
  • 1/4 cup reduced-fat mayonnaise
  • 1/4 cup fat-free plain yogurt
  • 3 teaspoons curry powder
  • 1/2 teaspoon salt

DIRECTIONS

  1. In a large bowl, combine the rice, apple, raisins, onion and almonds. In another bowl, combine the remaining ingredients. Pour over rice mixture and stir to combine. Refrigerate for at least 1 hour before serving.

Nutritional Analysis: One serving (2/3 cup) equals 205 calories, 7 g fat (1 g saturated fat), 2 mg cholesterol, 194 mg sodium, 32 g carbohydrate, 4 g fiber, 5 g protein. Diabetic Exchanges: 1-1/2 starch, 1 fat, 1/2 fruit.

We love this salad. In fact I just got requests for the recipe from three people! We're not onion lovers, and it's still zesty without them! Make it. Try it. Love it!

I was at a relatives house for a 65th Birthday Party when I realized she didn't have enough food for the crowd they had invited. I logged onto allrecipes.com and popped down to the local grocery store for the ingredients for a triple batch of this salad. It all disappeared. I spent a large portion of the evening writing down the recipe for guests. I wouldn't change a thing, it was excellent. It was easy and made with ingredients I almost always have on hand. It is an excellent accompaniement to grilled meats, particularly chicken. Make it and enjoy!
