INGREDIENTS
4 cups all-purpose flour
2/3 cup sugar
1/2 cup nonfat dry milk powder
4 teaspoons baking powder
1 teaspoon ground cinnamon
1/2 teaspoon salt
2/3 cup shortening
1 1/2 cups dried currants or raisins
ADDITIONAL INGREDIENTS (for each batch):
1 egg, lightly beaten
1/2 cup water

DIRECTIONS
In a large bowl, combine the flour, sugar, milk powder, baking powder, cinnamon and salt. Cut in shortening until mixture resembles coarse crumbs. Add currants. Store in an airtight container in a cool dry place for up to 6 months.
FOOTNOTE
To prepare scones: In a large bowl combine 3 cups mix, egg and water until moistened. Turn onto a lightly floured surface; knead 5-6 times. Transfer to a greased baking sheet and pat into a 9-in. circle. Cut into eight wedges (do not separate). Bake at 400 degrees F for 20-25 minutes or until golden brown. Serve warm. Yield: 8 scones.

These were easy to make and whole family enjoyed them for Easter breakfast. I formed the dough into a square about 9" and cut into square "biscuits", brushed the top with egg white, then sprinkled sugar. They were easy to handle and tasted good with the currants in them. I added a dollop of sour cream to the dough, and I don't know what that did for it, but they were tender and tasty, and no leftovers. I did use 1/2 whole wheat flour, it may have been whole wheat pastry flour and I baked the "biscuits" for a shorter time than suggested. This is a keeper! I used half the recipe and it made enough for 6 people.

Not only does this recipe make the best scone mix--it makes the best scones! After looking at other scone recipes that use perishable items I don't usually have on hand (e.g. sour cream), I tried this recipe. The scone are tender, moist, flavourful, and crisp on the outside. The recipe is incredibly adaptable. I've used dried cranberries, raisins, diced dried pear, and today I'm going to use frozen mixed berries. Friends who have received the mix as a gift have raved about it. I usually double the recipe. Doubling the recipe makes about 15 cups of mix or 5 batches of scones.

I was so happy to find this!! I make the All Day Apple Butter from this site and then can it to hand out as gifts to teachers. I wanted a biscuit/scone mix to put in a jar with the yummy apple butter (be sure to cut the sugar in half if you make that.) This was great. You do need to heap the sugar or it wont be sweet enough. I also used Butter Flavor Crisco for some extra flavor. Cranberries were on hand and they worked great. Definiteley a keeper. Thanks

This made a great gift for the neighbors! I split the six cups of mix this made and got 2 gifts out of each bacth. I also used orange flavored dried cranberries (I couldn't find currants), 4 of the 8 neighbors I gave it to called within the week to say how good it was.
