Directions

  1. Mix eggs, butter, apple syrup, sugar, vanilla extract, cinnamon, nutmeg, cardamom, and salt. together in a large bowl. Stir in half and half and milk. Place cubed bread and currants into a large baking dish. Stir in the egg mixture until bread is evenly coated. Cover and refrigerate for 30 minutes.
  2. Preheat an oven to 350 degrees F (175 degrees C). Uncover the baking dish.
  3. Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 45 minutes.

Truly a special recipe. I didn't change a thing! The spice combination is delicious, and the currants are wonderfully festive. (Raisins would be fine, in a pinch, but currants give more of a kick.) I also made a whiskey sauce to top the pudding when serving. (1/2 c butter, 1/2 c sugar, 1/2 c heavy cream, 1/4 c whiskey: heat to boiling, stirring constantly. Done. Super easy and great on bread puddings.) I made this pudding for Christmas dinner and could not have chosen a more perfect dessert. Everyone loved it. I will be making currant and cardamom bread pudding for years to come... THANK YOU SO MUCH FOR SHARING THIS RECIPE :)

This recipe will become a tradition with us. I made it and sent it to my husband's work party. There wasn't a crumb left to bring home. It tasted wonderful. Not your typical dessert. I made my own apple syrup from a recipe that I found on the internet using apply jelly. (Couldn't find apple syrup at the store.) Found dried currants at the local health food store in the bulk section. It is worth the effort to make this dessert.
