INGREDIENTS
1 pound pork tenderloin, cut into 1/4-inch strips
1 medium sweet red pepper, cut into 1-inch pieces
1 cup broccoli florets
4 green onions cut into 1-inch pieces
1 tablespoon vegetable oil
1 1/2 cups water
2 (3 ounce) packages pork ramen noodles
1 tablespoon minced fresh parsley
1 tablespoon soy sauce

DIRECTIONS
In a large skillet, cook pork, red pepper, broccoli and onions in oil until meat is no longer pink. Add the water, noodles with contents of seasoning packets, parsley and soy sauce. Bring to a boil. Reduce heat; cook for 3-4 minutes or until noodles are tender.

I make this dish a lot! I use a package of frozen stir-fry veggies with red pepper in it and only one seasoning packet to cut down on the sodium. If I don't have the green onions, I just omit them. My kids love it and will actually eat the veggies in this dish!! I ALWAYS use a pre-marinated mesquite tenderloin - it adds SO much more delicious flavor!! MMMMM!!

We liked this recipe. We don't care for red peppers so we used water chestnuts instead. The original recipe said that it would feed 3 and were feeding 5 so we added another package of ramen, doubled the pork, added extra broccoli, soy sauce and green onion. It was quite tasty - quick and inexpensive. Just the way we like them. :)

We liked this much more than we were expecting to. I didn't have green onions on hand, and I added a little minced garlic and some crushed red pepper flakes. I liked that this was quick and inexpensive to make. We'll be having this again.

I gave this 4 stars mainly because its so easy. I did modify the recipe by substituting chicken for the pork, omitting the bell pepper (my son doesn't like it)adding matchstick carrots for color and added garlic. I used one packet pork and one packet oriental ramen noodles and still thought it was a little bland. However, my son enjoyed it, it was easy, and pretty tasty- so all in all a great quick dinner!

I'm giving this recipe 4 stars because my kids absolutely loved it. My husband and I thought it was OK. However, I will make this again because it is so hard to find something all three of my kids will eat.
