This is very good. I "tweaked" it a little though:
I used green onions instead of a regular onion, and otherwise basically doubled the recipe except instead of adding double the carrots, celery and tomatoes, I added 10 oz chopped spinach leaves (lotsa iron!), a chopped red bell pepper, and a chopped summer squash. It was so pretty with all the colors in the bowl, and my husband, who was sick in bed with a cold, ate two HUGE bowls and asked me if I could "make some more for tomorrow night!" It's gotta be good for you with all those vegetables in it! ! ! We will definitely be enjoying this one again!
