"Diners will ladle out praises all around the table when you serve this flavorful soup. 'My husband and three sons can't get enough of it,' says Maxine Pierson of San Ramon, California. 'I created this recipe for a dinner I hosted for a group of friends. The main course was Italian, and I needed a good soup, so I converted a favorite tortilla soup recipe by substituting pasta and adding different seasonings.'"

INGREDIENTS
1 pound boneless, skinless chicken breasts, cut into 1/2 inch pieces
1 large onion, chopped
4 celery ribs, sliced
2 medium carrots, sliced
4 garlic cloves, minced
2 tablespoons butter or stick margarine
2 tablespoons olive or canola oil
1/4 cup all-purpose flour
1 teaspoon dried basil
1/2 teaspoon dried oregano
1/8 teaspoon pepper
3 (14.5 ounce) cans chicken broth
1 (14.5 ounce) can diced tomatoes, undrained
6 ounces uncooked tricolor spiral pasta

DIRECTIONS
In a large saucepan or Dutch oven, saute the chicken, onion, celery, carrots and garlic in butter and oil for 5 minutes. Stir in the flour, basil, oregano and pepper until blended. Gradually add broth and tomatoes. Bring to a boil. Reduce heat; cover and simmer for 1 hour. Return to a boil; stir in the pasta. Reduce heat; simmer, uncovered, for 12-15 minutes or until pasta is tender.

Nutritional Analysis: One serving (1 cup) equals 193 calories, 8 g fat (3 g saturated fat), 36 mg cholesterol, 652 mg sodium, 16 g carbohydrate, 2 g fiber, 15 g protein. Diabetic Exchanges: 1 starch, 1 lean meat, 1 fat.

This is very good. I "tweaked" it a little though: I used green onions instead of a regular onion, and otherwise basically doubled the recipe except instead of adding double the carrots, celery and tomatoes, I added 10 oz chopped spinach leaves (lotsa iron!), a chopped red bell pepper, and a chopped summer squash. It was so pretty with all the colors in the bowl, and my husband, who was sick in bed with a cold, ate two HUGE bowls and asked me if I could "make some more for tomorrow night!" It's gotta be good for you with all those vegetables in it! ! ! We will definitely be enjoying this one again!

This soup was very tasty, easy to prepare and hearty. My family all loved it, even my 5 year old who was complaining that he didn't want soup for dinner-lol! I added slied zucchini in with the chicken and veggies along with a bay leaf. When it was time to add the pasta I also added some frozen green peas and about 1/4 cup fresh minced parsley.Along with the spices ,I added a pinch of sugar,salt, Accent, and Emeril's Essence. Avery yummy soup that I will make again. IMO, Taste of Home always has the best recipes!

My family loved it. I think it would be perfect if cheese-filled tortellini were substituted for the spiral pasta, and maybe some italian green beans were thrown in for good measure. I made it with cooked chicken instead of raw (I added it with the broth) and it turned out great.
