This was pretty yummy! Although I made a lot of changes, my idea came from this recipe : ) I just took a cucumber hollowed the seeds out and filled it with tuna the way I normally make for sandwiches (tuna, mayo, shredded cheese, and a bit of black pepper). I must say I wouldnt go buy a cucumber for this purpose (maybe Im not a cucumber lover :P ) but for the one I had and had to use this was a super idea!

Not a bad tuna salad. I did eliminate the onions and the eggs. I just can't picture a tuna salad being good with eggs, but that's probably just me. I did add some dried parsley. Bf asked for the chicken cucumber boats, but I didn't feel the chicken salad, so I tried this one. I like it better than the other. Thanks!

These were ok for a light, healthy dinner. All the crunch felt really good and I'm sure I got a lot of vitamins in. I'm not sure about the tuna salad though, I had to doctor the taste with more lemon juice and a bit of dried parsley to actually like it. I'm sure it was partly the fault of the tuna I chose, it wasn't as high quality as I would have liked, and the salad dressing was a bit funny, too. With different brands it might come out a lot better. I thought adding cream cheese instead of the dressing / mayo would have made it tastier. I might make this again in the summer or when I crave the crunch. It was surprisingly filling, too!

This is fantastic! I tried it last night. I used an English cucumber which didnt have much seeds so i think next time i would chop large pieces of the cucumber and just mix it in, and eat it as a salad, though the boats is a great presentation and make it a good finger food. With a regular cucumber i would definitaly do the boat idea. Would also be good on a sandwich with just sliced cucumber. Anyway, a great overall recipe!
