Cucumber Tomato Salad

INGREDIENTS
2 medium tomatoes, sliced and quartered
1 large cucumber, peeled and sliced
4 green onions, chopped
1 tablespoon sugar
1 teaspoon salt
1/4 teaspoon pepper
1/3 cup cider vinegar
1 cup water

DIRECTIONS
In a bowl, combine the tomatoes, cucumber and onions. In a small bowl, combine the sugar, salt and pepper. Whisk in the vinegar and water. Pour over vegetables and toss to coat. Cover and refrigerate for 4 hours or overnight. Serve with a slotted spoon.

This was exactly the recipe I was looking for. I used red onion instead of green onion. I have already made this recipe twice and will be adding it to my regular list of core recipes.

I used cherry tomatoes and white onion instead of the greens onions. This was exactly what I was looking for. If you don't like it too tart add a little more sugar. Great!

This was really good and really simple; I used a red onion and white vinegar (I do not like apple cider vinegar). The flavors compliment each other very nicely. I let it marinate in the fridge for several hours prior to serving.

This was wonderful!! A relative used to make something similar, but I really didn't care for it. Since we have lots of tomatoes, cucumbers, and green onions in our garden right now I thought I would try this recipe. I am SO GLAD I did. My whole family loved it. It is the perfect combination of sweet and tart. Thank you for sharing.

Very simple and delicious! It worked out great for a BBQ with our neighbors. I sliced the cucumber very thin and used cherry tomatoes and thin sliced red onion. I did add a bit more sugar than called for and decreased the amount of water. After a few hours it was ready to serve. There wasn't any left!
