This is a really good basic recipe for sunomono. But for my family's taste, it calls for WAY too much vinegar. I cut it down to 1/4 cup of rice vinegar (actually just a tiny bit less. I only fill the 1/4 measuring cup about 3/4 of the way) and I only use 1 tsps of grated ginger root. I also sprinkle sesame seeds on it and pour a little bit of soy sauce over it to give it a little more flavor. For us, it is perfect :o)

I make a similar marinade for my cucumbers, but I had never thought to add ginger. Thank you so much for this recipe! Also used small seedless cucumbers which made preparing easier. No peeling and seeding :)

This was good, except there was ALMOST too much vinegar for my taste. I had so much sauce that I threw in a third cucumber. This is tastey in a martini glass with raw fish on top. Will make again.

Tasty. Has a unique sweet and a slight ginger taste. Served with 2 types of Chicken Katsus ("Chicken Katsu" and "Ashley's Chicken Katsu with Tonkatsu Sauce") and "Sesame Noodles."

This dish is wonderful. I make a double recipe and snack on it for several days afterwards. I have fed this to two people who say they don't like ginger and they both liked it (some folks just think they don't like ginger, I guess). It’s a great side dish to rich or heavy foods since it is light and refreshing. This one has become a standby in my home.

This Sunomono recipe is very good. Using rice vinegar with a dash of apple cider vinegar is better and adding crab meat makes it over the top.

My gramma used to make something like this and since the alzheimer's I've been trying to find the recipe somewhere. this was a GREAT base for me. I just sliced the cukes, added the same amt of vinegar except i use white vinegar, and the same sugar and salt. Voila! A perfect replica of my gramma's....thank u

Fantastic! I followed a reviewer's suggestion and added a few drops of sesame oil and some shredded carrots. What a delightful salad! I served it alongside rice and sesame-seared tuna steaks.

This was good - no doubt about that. I really thought it needed some soy sauce and sesame oil to finish it off. I also added some crab - to mimic the cucumber salad at my favorite local sushi restaurant.

This was really fantastic! The only bad thing I have to say about it is that it seemed like there was too much of the "dressing" for the cucumbers. But I just used a slotted spoon to serve them, and they turned out fine. Great recipe, I would definitely recommend it!

This salad is awesome! Quick and easy and I always have all the ingredients on hand. I use English cucumbers that I get at Costco and then I do not need to seed them. Excellent side dish for Asian food. I would recommend making it the day you are going to eat it. I made it once, didn't get to eat it until the next day and the cucumbers were not as crunchy. One of our family favorites.

This is a good starter recipe. I gave it 4 stars because I did as another reviewer recommended and added shaved carrots, sesame oil, black pepper, & toasted sesame seeds. My husband ate almost half of the salad in one sitting.
