1 (16 ounce) package medium shell pasta
1 (16 ounce) package frozen peas, thawed
1 medium cucumbers, halved and thinly sliced
1 small red onion, chopped
1 cup Ranch salad dressing

DIRECTIONS
Cook pasta according to package directions; drain and rinse in cold water. In a large bowl, combine the pasta, peas, cucumber and onion. Add dressing; toss to coat. Cover and chill at least 2 hours before serving.
FOOTNOTE
Nutritional Analysis: One 3/4-cup serving (prepared with fat-free ranch dressing) equals 165 calories, 1 g fat (trace saturated fat), trace cholesterol, 210 mg sodium, 33 g carbohydrate, 3 g fiber, 6 g protein. Diabetic Exchanges: 2 starch.

Man this is good stuff and very simple! Made a few additions to this by adding some cubed smoky ham and cubed cheddar. The ham and cheddar added a smoky saltiness that was a perfect accompaniment to the flavors of this salad. Wow this made a stupendous salad that could be served as a meal. Thanks we really enjoyed it.**Edit** to say that the pasta will absorb the ranch dressing, so if making ahead of time you should either wait to add the dressing right before serving or have extra on hand to remoisten the salad as needed.

This recipe was a little bland. I even added ham, cubed cheese and celery and it still needed more flavor.
