Cucumber Sandwiches

'I was introduced to a similar sandwich by a friend many years ago,' recalls Karen Schriefer, Stevensville, Maryland. 'I sometimes add thinly sliced onions for a change of pace,' she suggests. 'Along with fruit salad, it makes a light summer lunch.'

These little open faced cucumber sandwiches are always a hit, and I never leave a party without getting asked for the recipe several times! Allow the mayonnaise mixture to sit overnight in the refrigerator if you have the time -- it will taste even better.

These open faced Ukrainian sandwiches are very easy to make and are really good. If you can find Eastern European style sausage then try it with that, otherwise use your favorite cold cuts. They are called 'Kanapki' in Ukrainian.

If you like cucumbers and are a fan of potato chips, you'll love this dip! Using low fat versions of sour cream and cream cheese doesn't alter the flavor much, but sure saves on calories.
