Based on other's suggestions I didn't use the full water that was suggested and I feel it ended up too vinegar-ie. Regardless, I think this needed a little more sugar or something else to cut down on the acidity and something else to add more flavor.

Used cucumber, red onion, splenda and rice wine vinegar. omitted water and salt. all the water does is dilute the flavor. as made very low calorie.

I agree with Dee, this is the way Southerners make cucumber salad, been doing this for many years. It is a good recipe, but isn't a new one. I was looking for a new way to use fresh cucumbers. This is good, but been using this for many years!

This was a nice refreshing way to serve cucumbers. I only gave it a 4 because it is not a SUPER recipe. It is simple and good, but nothing that makes it "extra". This is the way southerners make cucumber salad alot. I used white vinegar because that is what I had on hand and I also added some fresh chopped dill. This is a good recipe and it always goes over well with any meal during the hot, summer months. Use onion as little or as much as you like, red onions can be strong, so you have to adjust to your personal taste. This is a good, simple recipe that anyone can make.

The onion taste was too strong in this recipe, but otherwise it would have been good. Next time I'll leave the onion out all together.

This is a very good basic cucumber salad. I followed the recipe exactly and my family enjoyed it. This is a classic recipe, nothing fancy, but quick and delicious none the less.

This recipe is adaptable to what you have ripe in your garden. In addition to the cucumber and onion I threw in a sliced bell pepper, some cherry tomato's and snap beans because they were just coming ripe in my garden. Used Red Wine Vinegar instead of rice wine because that is what I had. Delicious and refreshing.

I used white onion instead of regular and used the one cucumber I had on hand. I used agave nectar instead of sugar and I increased it as I like my salad a little sweeter. Added black pepper as well. Even the kids ate it up! Used garlic infused rice vinegar (what I had) YUM!!!!!!

I don't ordinarily like cucumbers, but I love this salad! I decreased the water to 1 cup to make it a little more tart. I used rather large cucumbers, so I doubled the liquid and that worked out great. I also used flavored rice vinegar, which made a BIG difference in the taste. I plan to serve this year round. It's my new favorite! I discovered you can re-use the liquid once. If you do that, add 1/3 cup more vinegar and a sprinkle of seasoned salt. Oh, and if you use SEASONED rice vinegar it's better than wonderful!

The only reason I didn't give this 5 starts is because I made a few changes that I feel made it better, but it a GREAT springing point! I used regular white vinegar because it's what I had (like other people on here). I also used white onions. I used 1 1/2 tsp sugar instead of just 1, the same amount of vinegar, and only 3/4 cup water instead of 1 1/2. I added probably what amounted to a tablespoon of olive oil to make it more like salad dressing (in place of the missing water). I also put in two tomatoes, largely cubed. It was sensational!

I have been making this since my grandmother gave me the recipe 40 years ago. I like the addition of the tomatoes. The trick with this recipe is to add 1/2 water and 1/2 ice cubes. When the ice cubes are melted, the salad is ready. Draining or not however you choose.I like to keep the dressing on it and maybe add to another salad I may serve. It needs to be eaten by 2 days or the cucumbers get soft and that is not good.

Used this as a marinade for cucumbers and red onions needed in a Greek salad. I ate 2 servings in one sitting and I don't even like cucumbers! I am unsure what to do if I serve this on its own: am I supposed to serve the liquid with the cucumbers?
