A touch of sweetness from the Caribbean gives a new flair to the standard Ropa Vieja (Cuban Meat Stew). Serve with rice.

This is a delicious pot roast with peppers and onions. Just like at the Cuban restaurants in the malls!

Picante sauce enlivens the flavor of this pot roast, which simmers in red wine with onions. It makes great tortilla filling, and could also be served over rice.

Ropa Vieja is a mainstay of the Cuban-American diet. It's traditionally made with skirt steak, a stringy cut of meat with the poetic name fajita (girdle) in Spanish. This recipe uses chicken breast and is fantastic; the leftovers are even better. It is wonderful served with white rice and fried plantains or a pineapple-coconut slaw.

Perk up pork with an overnight marinade of earthy, spicy cumin, peppercorns and oregano mixed with sherry and a melange of citrus juices. Lightly toasting the dried spices turns up the heat on this full-flavored roast.

Not too spicy and just a little bit sweet, Cuban-style black beans make a great side dish or main dish when served over rice.

An easily prepared, traditional dish that contains some lively flavors (raisins, stuffed green olives, capers, sherry wine, cumin, and vinegar). Potatoes are added in the final stage of cooking.

This is a popular Cuban pork dish known as Lechon Asado. My version is a shortcut. The pork is simmered in a broth until tender, then shredded. It's traditionally served with black beans and rice.

This is one of the more famous sandwiches straight out of the island of Cuba. This recipe came from my uncle who used to work at a restaurant in Pinar del Rio, Cuba and now works at a Cuban cafeteria here in Miami. This sandwich is best served with fried plantain chips and a cold mamey milkshake!
