My daughter and I really liked this dish. The only thing I added was some garlic powder, and only used 2 C of cheddar cheese. This recipe is very versatile, you can experiment with different cheeses and fillings. May try again using a different veggie or cheese combination.

I have been using this recipe for several months now, and it is awesome! I use fresh spinach that I rinse and microwave for about a minute before adding it to the onions, and I use less spinach than is called for. I recently found myself with only Mexican style cheese on hand, so I stirred in some salsa with the spinach and onion and it was incredible!! What I really like about this recipe is that you can pretty much throw in anything you have on hand (bacon & sausage are favorites at my house) and use any kind of cheese, and it still turns out great.

This is a great recipe! Made it the first time without any changes. Spinach was a little overpowering.Then made it for our church breakfast with the following changes and everyone loved it. I only made three changes...used (8) eggs, itailan blend cheese and crumbled bacon in it.... definately a keeper

Very very good. and easy! I added peppers and tomatoes to the onions, would highly recommend tomatoes - goes great with spinach. Also used a combination of cheddar and swiss because i didn't have any muenster. Very appetizing, quick, easy, and cheap! We have eaten for breakfast and also for dinner.

I love how all the reviews consist of "This is amazing, I just changed it!" I too changed this recipe to suit the ingredients I had on hand, I omitted the onion but added some chopped fresh parsley, basil, and chives, about half a fresh tomato, and some leftover frozen veggies. Oh, and a good dollop of diced garlic. Yum yum!

This is absolutely wonderful, so easy and so very tasty. I used half crumbled feta and half cheddar cheese. I've made it in muffin pans and have made it in a slab for get togethers. Every time I make it it disappears in no time at all.

this came out very greasy---i love cheese, but this was a bit off-putting...for the second try, i substituted EggBeaters, used a combination of fat free cheddar and fat free Monterey Jack cheeses, more onion, and a bit of minced garlic---that came out great, and not greasy at all

Only made a change of cheese - used half cheddar and half Italian blend. My family loved this - the 1 yr old and almost 3 yr old cleaned their plates and wanted seconds! Also adding this to our Lenten rotation next year!

very good..My kids ate it (my oldest eating 2 servings - HUGE DEAL) I did add a little ham and some mushrooms (while cooking the onions). My husband put some salsa on his plate and dipped each bite in it..Its a keeper as far as we are concerned

Pretty good, though I don't really eat eggs. I sauteed half an onion in two tablespoons of butter and added about half a box of the defrosted frozen spinach (make sure you drain it). After it cooled, I added the mixture to the eggs with a touch of cream and yellow American cheese. I garnished the dish with cherry tomatoes and a little Parmesan cheese.

Very good. Made in 10 inch pie plate. I used fresh spinach - sauted in pan with a little butter with some mushrooms and onion. My husband and I enjoyed, daughter did too.

Yummy :) I made small quiches. Used a muffin pan :) These are good when they are right out of the oven and when they are cold. :) These could be used as a wonderful snack. I did change it a bit when I made it. I used fresh spinach instead of frozen (fried it), then i also used sweet onions which gave the quiche a sweet taste i also placed a slice of tomato on top. Really good :))
