Fantastic !Wish I would have doubled recipe instead of making a different dish - this was gone in minutes, everyone raving while the other dish was barely touched. Used fresh baby spinach and jack/cheddar cheese - To Die For !Will be a staple recipe.

I made these in mini muffin pans, and they were very good! Next time I will add some more seasoning as I thought they were a little on the bland side.

I thought it was lacking a little in the seasoning dept so next time I will use more pepper/garlic etc. I used a combo of cheddar cheese and monterey jack and used crushed ritz crackers on the top for some texture. It was easy to make so with these additions I would make again. I served w/ turkey bacon and some fresh fruit for an easy supper.

Fractured my foot, in pain, can't walk, alone at home...WHAT DO I EAT??? Hobbled over to the kitchen....well...considering I had to use what was in my fridge I made quite a considerable amount of changes to this recipe. I'm not so sure about the combination of ingredients I have in my fridge! LOL While kneeling on a kitchen chair in front of the stove to keep pressure off my foot, I greased a 9" square baking pan with olive oil and lined the bottom and sides with 2 sliced boiled potatoes. Sprinkled potato with 1/4 tsp: salt, pepper, oregano, paprika, and garlic powder. Sprinkled a little more olive oil over seasoned potato. Placed in oven at 350 and baked until slightly browned (about 20 minutes). Meanwhile, I diced 3 small red onions & 4 garlic cloves and sauteed in 1 tablespoon olive oil until softened. Then I stirred in 1 cup sliced cremini mushrooms and corn removed from 2 corn on the cobs. Sauteed until tender. Removed from heat, stirred in a handful chopped cilantro. In a large bowl I beat 6 eggs. Beat in 1/2 cup milk, 1/2 tsp paprika & cumino, 1/4 teaspoon: salt, pepper, & crushed oregano. Stirred into 2 cups mozzarella cheese into eggs. Stirred vegetable mixture into eggs. Poured over potatoes. Smoothed out with back of spoon. Topped with slices of tomato. Placed in oven uncovered (wanted liquid from tomato & corn to evaporate). Meanwhile, pureed: 1 avocado, 1 jalapeno, 4 tomatillos, 1/2 lime juiced, pinch salt, pinch ground cumino, 1 small red onion, 2 garlic

Just lovely! I added some green onion, a small amount of chopped chives, finely chopped mushrooms, and some extra spinach since I like a quiche that has more veggies in it. Also added a few extra eggs to account for the added veggies. I only had sharp cheddar on hand so used that in-place. Also had extra pie dough I wanted to use, so I used a cookie cutter to place a crust on just the base of the quiche, and they came out fantastic with just the right flavor and everyone asking for the recipe!

I was looking for a healthy meal to make tonight and came across this recipe. I added some fresh asparagus and ham cubes that I already had in the fridge. I also used parmasan cheese and only used half of what the recipe called for. It came out beautifully and it was delicious. Even my burger loving boyfriend enjoyed it

This recipe is the best. I have used many recipes from allrecipes and this is my first review. I am a breakfast person. I love eggs, potatoes, bacon, everything that has to do with breakfast. I am trying to eat healthy and so I made the quiche as written only I used 2 cups fat free sharp cheddar, 1 cup regular sharp cheddar and egg beaters. The quiche was yummy. I even tried it in the microwave the next day and it was just as yummy Pat

I used one cup fat free cottage cheese, one cup spicy pepper jack, and one cup low-fat Italian blend for the cheese. I thought it was really good. The only place I like spinach is in a quiche and this is a much healthier option than the kind with the crust.

These were pretty tasty AND easy, I have to admit! I had some egg leftover from a blown-egg craft project and wanted to fix them up, this was perfect. I used different cheese and added some tomato. The recipe is pretty flexible like many have said. Thanks!

This was my first time making a quiche and this recipe exceeded my expectations. It was super! My husband doesn't like quiche and now likes mine (this recipe). It is chock full of spinach, which we love, and is full of taste. I love it not having a crust to save on calories and I'm not a big fan of pie crust. I will make this one of my staple recipes.
