Ingredients

  • Nonstick olive oil cooking spray
  • 1 cup refrigerated or frozen egg product, thawed
  • 1/3 cup whole wheat pastry flour
  • 1/4 teaspoon black pepper
  • 1/8 teaspoon kosher salt
  • 1 1/2 cups low-fat cottage cheese
  • 1 (10 ounce) package frozen chopped broccoli, cooked and drained
  • 1 cup crumbled reduced-fat feta cheese
  • 1 cup shredded reduced-fat Cheddar cheese

Directions

  1. Lightly coat a 9-inch pie plate with cooking spray.
  2. In a medium mixing bowl, combine egg product, pastry flour, pepper, and salt. Stir in cottage cheese, broccoli, feta, and cheddar. Spoon into the pie plate.
  3. Bake in a 350 degrees F oven for 40 to 45 minutes or until a knife inserted near center comes out clean. Cool on a wire rack for 5 to 10 minutes before serving.
