Crunchy Tuna Turnovers

INGREDIENTS
2 (6 ounce) cans tuna, drained and flaked
1/2 cup shredded Cheddar cheese
1/3 cup mayonnaise
1/3 cup sliced ripe olives
1/8 teaspoon lemon-pepper seasoning
1 (12 ounce) package refrigerated buttermilk biscuits
1 egg, beaten
1 1/4 cups crushed potato chips

DIRECTIONS
In a small bowl, combine tuna, cheese, mayonnaise, olives and lemon-pepper; set aside. On a lightly floured surface, flatten each biscuit into a 5-in. circle. Spoon 2 rounded tablespoonfuls of tuna mixture onto one side of each circle. Fold dough over filling; press edges with a fork to seal.
Place egg and potato chips in separate shallow bowls. Dip turnovers in egg, then coat with chips. Place on an ungreased baking sheet. Make a 2-1/2-in. slit in top of each turnover. Bake at 375 degrees F for 18-21 minutes or until golden brown.

I really enjoyed these (as did my bf!) However, I left out the olives (I just really don't like olives), and I used two smaller biscuits to make a larger one. Additionally, I used crushed ritz crackers instead of potato chips(didn't have any on hand.) They were good, but I wish they had a little more zest, which next time I'll use more lemon pepper. The ritz added a really nice crunchy texture, but gave it a different taste than the chips. (More bready.) And, they were fun to eat and looked great. =)

This recipe was awesome!! I had all of the ingredients on hand and it was a sinch to make!! I made it more "mexican" by making it with mexican blend cheese and instead of potato chips i crushed up Salsa Sun Chips ... i used smaller biscuits so i used 2 and sealed them together. My mom loved them and i'll def. be making these again!!!

We used jumbo grands biscuits- 5 per pack - and they were huge and wonderful. Cooked in same amount of time. Reheated wonderfully in microwave the next day.

My husband and I absolutely loved these! I'm thinking of trying this same idea with ham and cheese and other deli meats...you have your sandwhich and your "side" of chips all in one! The only change I made was accidental! (I had canned olives on hand and they turned out to have jalapeno in them..which added some more flavor) One thing my husband did mention is that he liked these better the next day slightly warmed.(we took them on a picnic)"There's just something about "hot" tuna that doesn't seem right," he said..so don't worry they're still good the next day! Thanks for the recipe :-D
