Since I prefer a tangy pink dressing with shrimp salad, this recipe was ideal. The addition of water chestnuts and peas creates a nice texture. I made just minor adjustments - lime juice instead of lemon, and I boiled my own shrimp rather than use the pre-cooked. Chilling it overnight improves the flavor - a nice salad for a hot summer day!
