INGREDIENTS
1 1/2 cups crisp rice cereal
1 1/4 cups flaked coconut
2 egg whites
3 tablespoons sugar
1/8 teaspoon almond extract

DIRECTIONS
In a small bowl, combine all ingredients. With damp fingers, shape into 1-1/2-in. mounds on parchment paper-lined baking sheets. Bake at 300 degrees F for 20-25 minutes or until edges are lightly browned. Remove from pans to wire racks to cool.

Nutritional Analysis: 2 cookies equals 76 calories, 3 g fat (3 g saturated fat), 0 cholesterol, 66 mg sodium, 11 g carbohydrate, trace fiber, 1 g protein. Diabetic Exchanges: 1 fat, 1/2 starch.

Loved them. Took them to a dinner club and everyone requested the recipe. Cut back on the sugar to 1T. because the coconut was sweetened and they came out great!

I followed the recipie exactly. They were done in 20 mins and look just like the picture (and taste even better!). This recipie is quick, easy, delishious, and creates very little mess.

Easy and delicious! For St. Patrick's Day, place coconut in plastic bag with a few drops of green food color and shake to make the coconut green before you mix it with the other ingredients.

This were a good way of using up some extra ingredients but they were just ok. Maybe adding some butterscotch chips would have helped.
