Pretty good- and so easy to adapt to what you have in the kitchen. I was out of Mayo and used Ranch. Was out of pecans and used a breadcrumb/glazed walnuts mixture. I think the pecans would be better. Will be using them next time. Thanks for a great fall-back recipe for parties.

Another excellent recipe I can't wait to present tomorrow. I baked thin sliced boneless chicken breasts with fresh garlic, butter, onion powder and fresh ground salt and pepper for 20 mins. covered so it wouldn't dry out. When it cooled down I chopped it in my zyliss chopper. I finely chopped green onions and then I did a mix of sharp and mild cheddar which I put through my zyliss grater. That made the cheese super fine and allowed it to mix well with the other ingredients. I used pecans ground in my blender attachment. My husband and I both love them and we liked them better before they were chilled so will be sure to serve at room temp.

This is awesome. However I made changes based on the reviews. I used Perdue Short Cuts honey glazed chicken, also used more mayo (cause mayo is yummy), added celery and finally I used a finely shredded mexican cheese blend versus strait up cheddar. I am not a big cheddar fan. I misread the recipe and dumped all the pecans into the mixing bowl. So I mixed them in and rolled it in walnuts. It turned out great.

These were really good and really easy. I prepped everything and my 8 year old daughter rolled the balls and assembled everything else. Then...they were left on the counter and the dog got to them...

This recipe was great! I had very little time to prepare an app and these worked great! Everyone seemed skeptical by the name but they were a low carb version of a chicken salad sandwich. I used crushed walnuts as a coating and didn't have green onions on hand so I skipped those but everyone loved them and they were gone in about 20 minutes!

These were a big hit at a girls night spa party (many were on low carb diets!). I added red grapes (finely chopped) to the mix, - thought the tartness added to the chicken salad.

I found this recipe to be a very bland chicken salad recipe. Sorry won't make again.

Good recipe. Used left over chicken fajita meat. Doubled the recipe. If you make this, you must use the green onions. Delicious.

I altered the recipe a bit to suit what I had on hand - used minced chicken bacon, ranch dressing instead of mayo and rolled the balls in breadcrumbs. I think heating the meat so the cheese melts a bit when you put them together makes them turn out better.

I made these as appetizers for a casual gathering, and everyone loved them. (My husband, who is on the South Beach Diet, especially enjoyed them as well!)In a way, these are really just bun-less chicken salad sandwhiches--which is cool. They were great as is, but I think next time I'll add finely chopped celery and maybe a bit of dry mustard into the mix. Once you make it, you see that it is very easy to personalize it. Thanks for the great recipe!

Delicious and so easy to make. I toasted the pecans a little before rolling the balls in them and used Miracle Whip rather than mayonnaise since we prefer it.I will definitely use this one again.

Absolutely phenomenal. I served these at a party for 20 people - they devoured them, and 5 people took home the recipe. AWESOME. Will definitely make them again and again! I did have to quadruple the recipe! (4x)

I used this recipe for the first time to bring to a dinner party. People really seemed to like it. I used Perdue shortcuts chicken so I didn't have to cook and used a blender to chop it up. I also used a blender to chop the pecans. I used a little extra mayo but kept the rest of the recipe the same.

This is outstanding. I attend a New Year's party where an ex-chef from the Marriot chain and I compete for best appetizer (I'm not sure he knows we are in competition). He announced this year that I am the appetizer king thanks to this recipe. Be sure to chop the pecans really fine - I used a mini food processor. Try it - You may be the next king (or queen).

It was incredible! Super easy using things I had around the house!! I made one little change, I used chives instead of green onions. Took them to a Christmas party and they were a HUGE hit. I've already given out the recipe 5 times!!!
