I made these as appetizers for a casual gathering, and everyone loved them. (My husband, who is on the South Beach Diet, especially enjoyed them as well!)In a way, these are really just bun-less chicken salad sandwhiches--which is cool. They were great as is, but I think next time I'll add finely chopped celery and maybe a bit of dry mustard into the mix. Once you make it, you see that it is very easy to personalize it.
