Crunchy Apple Muffins

INGREDIENTS

  • 1 cup all-purpose flour
  • 1/2 cup whole wheat flour
  • 1/2 cup sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1 egg
  • 1/2 cup fat-free milk
  • 2 tablespoons butter or stick margarine, melted
  • 1 cup tart apples - peeled, cored and chopped
  • TOPPING:
  • 1/4 cup reduced-fat granola cereal
  • 2 tablespoons chopped walnuts
  • 1 tablespoon brown sugar
  • 1/2 teaspoon ground cinnamon
  • 2 teaspoons fat free milk

DIRECTIONS

  1. In a large bowl, combine flours, sugar, baking powder, cinnamon and salt. In another bowl, beat egg, milk and butter. Stir into dry ingredients just until moistened. Fold in apples. Coat jumbo muffin cups with nonstick cooking spray; fill half full.
  2. For topping, combine the cereal, walnuts, brown sugar, cinnamon and milk. Sprinkle over muffins. Bake at 375 degrees F for 20-25 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pan to a wire rack. Serve warm.

Nutritional Analysis: One muffin equals 282 calories, 7 g fat (3 g saturated fat), 46 mg cholesterol, 248 mg sodium, 50 g carbohydrate, 3 g fiber, 6 g protein.

The students in my Nutrition and Wellness classes made these muffins as part of their fruit/breakfast unit and had only great comments! We made them in regular size muffin tins and came out with 10-12 muffins per batch. Their only comment was that they would have liked more of the crunchy granola topping.

I wasn't a fan of this recipes, I think that it was a little to dense. I brought it to a brunch and other people commented that they really enjoyed it. To each their own.

These were pretty good. Not dry like I thought they'd be. They are healthy, but need just a little more "umph" or flavor. I thought they were missing something.
