Ingredients

  • 2/3 cup shortening
  • 1/2 cup sugar
  • 1/2 cup packed brown sugar
  • 2 eggs
  • 1/4 cup orange juice
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup diced peeled apples
  • 3/4 cup raisins
  • 3/4 cup chopped pecans

Directions

  1. In a mixing bowl, cream shortening and sugars. Add eggs and orange juice; beat well. Combine flour, baking soda and salt; stir into creamed mixture. Stir in apple, raisins and pecans. Pour into a greased 9-in. x 5-in. x 3-in. loaf pan. Bake at 350 degrees F for 55-60 minutes or until bread tests done. Cool in pan 10 minutes before removing to a wire rack.
