Carne Asada Steak Sandwich with Avocado Salad

Submitted by: Chef Tom McAliney, Brandt Beef
My carne asada steak sandwich with avocado salad recipe is perfect for tailgating. About ninety percent of this recipe can be prepared in advance - meaning that when game day rolls around, all you'll have to do is fire up the grill, cook the steaks, and melt the cheese on the bread.

Grilled steaks are topped with Mexican-style ingredients, and served over rice. Fresh salsa is a wonderful addition to this recipe.

Pan seared flat iron steaks are served with mushrooms and shallots in a balsamic red wine sauce. I like these steaks because they are tender, but not so lean that they get tough if you over cook them.

One of the more comfortable of comfort foods, breaded steaks are fried, and served with a seasoned cream gravy. Mashed potatoes and greens, or a salad would be the perfect complimentary side dishes.

Savory chuck steaks are pan-fried and topped with a Marsala, garlic, and rosemary sauce. Great when grilling outside is out of the question. Serve with a crisp green salad and baked potato.

The marinade for this steak is equally delicious brushed on beef kabobs. I like it so much better that store-bought varieties. --Janet Briggs

Here is an unusual interpretation of beef stew. It simmers in the oven with a topping of beef-flavored stuffing mix, so you can skip potatoes or other carbohydrates at this meal.

My wife prefers my pan-fried steaks over grilled Filet Mignon, New York Strip or Sirloin any day. The key is not so much the cut of the meat, rather how it is prepared to give it its magic.
