If you want crispy chicken, be sure to space the thighs out evenly. Use 2 cookie sheets ( 4 thighs on each ) and space the potatoes between them. Add onions half-way through cooking to prevent them from being burnt in the end ( Unless you like it that way ). Also, as previous posters have mentioned, BRINE. 2 quarts of water, 1/4 cup of salt, 1/4 cup of sugar, and soak for 45 minutes. I've made this recipe without the brine and it doesn't taste nearly as good. This is a great, easy recipe if done right! (:

5 stars for an adult meal but probably not so much for kids. I loved the potatoes the most. They were so good. Next time I am adding more potatoes.

Not exactly what I'd call crispy, but tasted great nonetheless! I used fresh rosemary but dried oregano. Also subbed chicken legs for thighs. Will definately make this again!

This was really good! I made a few small changes, I left out the oregano and I added 3 cloves minced garlic and 1 shallot. I will make this again for sure. Hubby and kids loved it too!

This was delicious! I used chicken breasts instead of thighs so I put the potatoes in first and then added the chicken breasts the last 30 minutes of cooking. It came out wonderful. I will be making this again.

Yummy chicken. I folowed the recipie except I used dried oregano. I used bone in chicken thighs. Next time, I will throw some breasts in because my husband likes that better. I may add some onion to roast with the potatoes too. Tasted like a rotisserie chicken, yum!

I rarely give five stars, but this was too tasty and too easy to deserve anything less! I used skinless boneless thighs; added lemon juice and real garlic, as suggested; and the fresh oregano was so delicious I consider it essential. Lots of salt and pepper, a sprinkle of paprika for colour, and this was a darned fine meal. Significant other loved it, too!

Ok - Let me just say that my six-year-old daughter who eats like a hummingbird was shoving the chicken in her mouth with two hands. She and my son (who's four) had seconds. With a full mouth, my daughter says, "This chicken is REALLY good, Mommy. Can we have it again tomorrow?" An hour later, she comes over and tells me how good it was again. I think I'll be putting this one into my rotation! The only thing I did differently was add some cherry tomatoes which were getting a little over-ripe for salads. Thanks for this recipe!

Tender, juicy and oh, so easy chicken! Taters are delicious, too! Unfortunately I didn't have fresh rosemary so I used dry. The chicken skin came out so crispy (which we don't eat) without basting at the end. Will do this one again!!

This dish was super easy to make and tasted like pure comfort food. I used a mortal and pestle to crush the dried rosemary, oregano, garlic powder, onion powder, salt and pepper. (I added a drizzle of olive oil to help with the consistency of the herb mixture.) This smelled SOOOO good while cooking - - like a whole roasted chicken. Be sure to cut the potatoes small so they get fork tender. DELICIOUS!!!

good! I drizzled olive oil in the baking dish and then a little over the chicken thighs and potatoes (more over potatoes), then brushed the tops of chick with melted butter before seasoning. Very cripy and moist!

This recipe was delicious. The chicken was very moist. I used a combination ob thighs and breasts (which I cut in half with my trusty meat cleaver so they would cook through). I used fingerling potatoes (had them on hand and needed to use) and left them whole. I used 3 cloves of grated fresh garlic that I mixed with the oil before coating the chicken and taters. The chicken skin was not terribly crispy. I will make this again, but may boost the heat for the last 15 minutes after basting and removing the grease. Thanks for a great recipe!

This is an excellent dish for a busy day. Tasty and doesn't take a lot of prep time. Note: Being a lazy (and cheap) cook, I place the chicken and potatoes into a saved empty bread bag, Pour in the oil, toss a bit, add the herbs, toss a bit more, and put them on a large baking sheet with sides. Then I toss the bag! No bowl to wash!

This was an incredibly easy and tasty, dish. I did use real garlic, and I rubbed the rosemary/oregano/garlic/olive oil mixture on the chicken before baking. I covered the chicken and potatoes for the first 30 minutes, then uncovered for 45. I also added grape tomatoes and sliced crimini mushrooms 30 minutes in. (I probably should have drained off the fat as some people suggested, but I was too lazy.) Very, very yummy, and it smells so divine in the oven!
