I didn't have enough rhubarb so I added about a cup of strawberries to the mix. Used a pre-made crust from Trader Joe's and added extra crispy topping. MAN was this good. I'm usually not a pie lover but this was amazing. We ate almost half the pie when it came out the oven. Will make again and again. So simple and delish!

Made 2 pies with this recipe to take to work. Rhubarb is my favorite kind of pie. The filling was wonderful, kinda sweet and kinda tart, just like I like. I was not, however, a fan of the cornflakes in the topping. They gave what I thought was an odd texture, not really crispy. Was I supposed to crush the flakes? I'll make this again but leave out the cereal.

Ok, I don't even like rhubarb, but I had to say this is one of the best rhubarb recipes I've ever had. It was the first thing to go when we had a pig-out day at work!

My husband (who doesn't usually care for rhubarb) thought this recipe should get a "five star" rating. The only reason I'm giving it a "four" is because it was a bit runny. Of course, with good vanilla ice cream, the extra liquid did add some more flavor!

very yummy pie! The topping on the pie is awesome! I actually doubled the topping recipe because the first pie I made, the top seemed a little thin, but either way it was delicious

so i'm only giving this four stars, but it's probably me more than the recipe. it was VERY good, but just too tart for my personal taste. my boyfriend LOVES it though. and yes, that cornflake topping is to die for!!! i'll definitely be putting that on future (sweeter, lol) pies! one note to potential bakers: i bought the frozen "Deep Dish" pie crusts (Pillsbury) and there was not enough filling to fill the crust. so use the shallower ones! anyway, thanks for a good recipe and a GREAT topping and i DO recommend this to people who don't mind a little tartness!!

I LOVE rhubarb pie, and when I made this one I had to substitute Special K w/red berries since I had no cornflakes on hand. It was GREAT. However, there was too much of the crumbly topping. I used about half of the crumble topping mixture. Made that way, the pie was perfect and the whole pie eaten in mere hours. If it weren't for the excessive topping, this would be a 5 STAR Recipe, for sure! Loved it, though and will definitely make it again!

Great pie. I've never made one with just rhubarb and no other fruit and was pleasantly surprised. I did add a dash of nutmeg to the filling and a dash of cinnamon to the topping. It was SO easy and not overly sweet.

Wow...can you say easy? I have never been a good baker but am trying new things and this turned out great! I added a little bit more sugar and used honey bunches of oats because it was the only cereal we had. Yum!

This is a wonderful recipe and so easy. I had about 3 cups of rhubarb so I added a layer of fresh sliced strawberries. I also doubled the topping. My family finished it before it was cool.

This is a great recipe!! We really loved the crunch in the topping with the corn flakes. Really nice combination. Second time I made it I just increased the rhubarb a bit and also the sugar and flour. Doubled the topping. YUmmy. Thanks for sharing.

OMG! So easy and simple and soooooo good. My husband was really reluctant to try this (his mom used to make an awful rhubarb pie), but he loved it too. I'm going to use the crust on other pies. Also, I only had 2+ cups of diced rhubarb. I used the same amount of everything else and it turned out fabulous still.

Last night I made it for the second time (added a heart-cut strawberry on top of the crust for Valentines). This time I used bran flakes because that's what I had in the house. It was still very good (more like a crisp though), but having tried the cornflakes the first time, I know that the cornflakes are MUCH better!
