1/2 cup egg substitute
1/2 cup fat-free milk
1/4 cup orange juice
1 teaspoon vanilla extract
1 dash ground nutmeg
12 (3/4 inch thick) slices day-old French bread
1 1/2 cups crushed cornflakes

DIRECTIONS
In a shallow dish, combine the egg substitute, milk, orange juice, vanilla and nutmeg. Add bread; soak for 5 minutes, turning once. Coat both sides of each slice with cornflake crumbs. Place in a 15-in. x 10-in. x 1-in. baking pan coated with nonstick cooking spray. Bake at 425 degrees F for 10 minutes; turn. Bake 5-8 minutes longer or until golden brown.

Nutritional Analysis: One slice equals 147 calories, 1 g fat (trace saturated fat), trace cholesterol, 359 mg sodium, 28 g carbohydrate, 1 g fiber, 5 g protein. Diabetic Exchanges: 2 starch.

This was a nice change to plain old French toast. I like the fact that this was a low fat recipe, but it didn’t taste like it. I topped the French toast with the blueberry sauce from the blueberry French toast recipe and it was absolutely decadent. I did add some cinnamon and salt to the batter and would probably add a little vanilla next time. This recipe could be modified to feed a large or small crowd very easily. Great for brunch.

For some reason I do not have much luck with the French Toast recipes that you bake. They come out either too soggy or too dry. My family had something like this in Jamaica for breakfast and it was always so good. I tried making it for breakfast on Christmas morning and it wasn’t all that great. It was o.k. but I won’t make it again.
